Berwick Edge, made using traditional cheese making skills, two other farmhouse cheeses are produced in the dairy at Doddington. After adopting several continental methods, the Berwick Edge is a local variation of traditional Dutch Gouda, named after the ridge on the farm which forms the eastern edge of the Glendale Valley. It is a moist and creamy cheese with a strong fruity aftertaste and is matured for 8-12 months.
